Brown Soda Bread

Ready in 10 minutes + 45 mins baking

Serves 2  8x4 loaves

 Ingredients

  • 2 C. Whole-wheat flour

  • 1 1/4 C. Oats

  • 1/4 C. Ground flax seed (wheat germ or bran can be substituted)

  • 1/4 C. Brown sugar (optional)

  • 1 C. All-purpose flour (plain white)

  • Pinch salt

  • 2 teaspoons bread soda

  • 3 tablespoons butter/margarine

  • 500ml buttermilk

Preparation

1. Preheat the oven to 350F.

2. Prepare pans – grease well.

3. Mix whole-wheat flour, oats, flax and brown sugar together in a mixing bowl.

4. Sieve or whisk in flour, salt & bread (baking) soda.

5. Using a pastry blender, or finger tips cut  in butter. (You can also grate the butter in just mix through after to evenly disperse).

6. Add milk & mix until just combined (mixture should be a wet consistency).

7. Add to greased loaf tin.

8. Bake in a preheated oven 350F for 40-45 minutes or until a toothpick comes out clean.

9. Cool on a wire rack.

Tips

  1. If you do not have buttermilk you can substitute the following:

    1. Plain greek yogurt mixed with a little milk/water 

    2. 500ml milk + 2 tbsp lemon juice or vinegar

    3. Sour milk: do not throw it out!
